Loaded Porridge
Growing up, I feel like our family had porridge everyday at one point, lol. I didn’t realize how much I actually enjoyed it until years later. Fast forward to now, I crave it and love switching it up between eggs and toast on a regular day, while still getting a balanced and delicious breakfast in. Enjoy!
Ingredients
1/2 cup old fashioned oats
1 cup water
pinch of salt
1 dollop of vanilla Greek yogurt
1 tsp brown sugar
1/2 tbsp hearts
1 tsp chia seeds
drizzle of almond butter
1 tbsp trail mix (I used @elanbio)
a few cherries, halved
optional: additional milk, mini chocolate chips would be delicious too
Directions
1. In a small-medium sized pot, add 1 cup of water, 1/2 cup oats, a pinch of salt and bring to a boil. Reduce heat to medium-low and let cook for 10 minutes uncovered and stirring occasionally.
2. Remove from heat, add a splash of milk if desired and cover and let sit for 5 minutes.
Top with brown sugar, vanilla Greek yogurt, hemp hearts, chia seeds, trail mix, almond butter and cherries :)
